Craftsman and job categories are custom taxonomies used to categories Craftsman and Job Post Types
In order to add edit them or to add image to top level categories go to: Craftsmen/Jobs -> Craftsman/Job Categories from wp admin dashboard.
From there you'll see list of categories and you can add new one:
